Gluten Free: Who Needs It?

Today we are talking about whether or not people really need to try going gluten-free. Gluten is a naturally-occurring mixture of proteins found in wheat and other whole grains. For more people, gluten is a source of dietary fiber. So, why do people avoid it? There seems to be a bit of confusion as to whether or not it’s good for you. 1-2% of the population suffers from celiac disease. Having celiac disease means you are unable to absorb gluten, and it results in bloating, diarrhea, gas, belly pain, and loss of appetite. Non-celiac gluten sensitivity has similar symptoms. Both mean you must avoid gluten completely to feel healthy. Most people can and should eat gluten to receive important B vitamin fortifications and iron.
